Many a time something as simple as french fries also gets complicated. a lot of restaurant that i visit do not get recipe consistently correct. so let’s today see a simple easy way to make your French fries consistently perfect every time.
- Large Potatoes (preferably older potatoes for less moisture)
- Oil (for frying)
- Potato Starch or Corn Starch (for extra crispiness)
- Salt
- Roasted Coriander Powder (for seasoning)
- Chili Powder (for seasoning)
- Chaat Masala (for seasoning)
- Fresh Parsley (chopped, for garnish)
- Black Pepper (crushed, for seasoning)
Ready the potatoes
To make frech fries, use large potatoes that are actually not a fresh harvest. First, wash and scrape the potatoes well, then peel them. make sure you have a very sharp peeler. so that you remove a very thin peel of this potato. well a lot of potato gets wasted if you do not peel it correctly.
The reason for using old potatoes is that the moisture content in these patoes is relatively lesser. and with this the final product is nice, crisp and golden brown.
Cut it
Now cut these potatoes vertically into slices. after this stack these slices on top of each other and cut this into long strips or batons. After cutting the potatoes, collect these batons and reserve them in cold water. cut the rest of the potatoes in the same way.
Now put the long strips in cold water. Once these are dipped in cold water. these need to be transferred on a clean kitchen towel. the potatoes need to be partted dry. and make sure you do not break the batons.
Oil blanching
Once these are completely patted dry, you need to start frying a portion at a time. and this could be 15 to 20 pieces. Fry these potato pieces in medium hot oil for exactly 30 seconds. And transfer to an absorbent kitchen paper. this method is technically known as oil blanching. similary, keep frying . make sure at any point you do not overcrowd the oil. that’s step 1 of making french fries.
For the next step trasfer all these half fried french fries on tray and press this down with another kitchen towel. to make sure all the oil is absorbed.
Add Starch
To make extra crispy, Spread some potato starch on batons and rub this well. if you do not have this, use corn starch. this batch of potato needs to be forzen for a minimum of 30 minutes, before start frying it the second time, so freeze it for 30 minutes.
Second fry
Now start frying for the second time. Heat the oil on medium flame, then fry the potatoes for 45 seconds to 1 minute or till it’s perfectly golden brown in color. fry cut the rest of the potatoes in the same way.
Seasoning
While the fries are still warm, transfer them on a larger surface area. this is the time to start seasoning it. firstly Spread salt over frech fries according to your taste, then to make it spicy add some roasted coriander powder and a little bit of chilli powder and finally add some chaat masala.
Topping this up with some freshly chopped Parsley and crushed Black Pepper. now mix it gently.
