Sweet potato casserole ingredients
For the Sweet Potato Mixture:
- 4 pounds sweet potatoes (about 4 medium-large potatoes)
- 3 large eggs
- ½ cup sugar
- 6 tablespoons melted butter
- ½ tablespoon vanilla extract
- 1 cup dried cranberries
For the Pecan Crumb Topping:
- ⅔ cup brown sugar
- ⅓ cup all-purpose flour
- 3 tablespoons cold, unsalted butter (diced)
- 1 cup coarsely chopped pecans

Prepare the Sweet Potatoes
To make this delicious recipe, start by taking four pounds of sweet potatoes or about four medium-large potatoes. peel all of them, then chop into one-inch pieces. Make the pieces about the same thickness so they cook more evenly.
Cook the Sweet Potatoes
Now transfer all of your chopped potatoes to a large pot or a dutch oven. then continue cooking uncovered at a medium boil for about 10 to 15 minutes or until the potatoes are easily pierced with a fork.
When patotoes has done, with the help of a lid, you want to completely drain the water from your sweet patoes.
While the potatoes are cooking, you will want to preheat your oven to 350 degrees Fahrenheit.
Mash the Sweet Potatoes
The sweet potatoes are completely dry, and now it’s time to mash them. You can use a potato masher, but to get them really creamy you can also use an electric hand mixer.
Whisk the Flavorful Egg Mixture
Now in a medium bowl, whisk together three large eggs and half a cup of sugar. then whisk in six tablespoons of melted butter and half a tablespoon of vanilla extract. whisk that together unitll it’s well-combined .
Combine and Add Cranberries
Once the mixture is well-combined then pour that mixture into you hot sweet potatoes. this mixutre adds amazing flavor and transform the texture of this casserole. whisk that into the sweet potatoes untill it’s well-incorporated.
Now add one cup of dried cranberries and mix it into the mixture.
Transfer to Casserole Dish
Now spread the sweet potato mixture in a clean 9 x 13 inch casserole dish. Then smooth the top surface.
Make the Pecan Crumb Topping
Now it’s time to make the crumb topping. In a small bowl, whisk together two-thirds cup brown sugar and one-third cup flour. Add three tablespoons of diced, cold, unsalted butter and rub the mixture together with your fingers until pea-sized crumbs form. Next, stir in one cup of coarsely chopped pecans.
Bake to Perfection
Now sprinkle that mixture evenly over the casserole dish. bake uncovered in the center of a preheated oven at 350 degree Fahrenheit for 35 to 40 minutes.
when it’s done, the topping will be golden and toasted, and the sweet potatoes will start puffing at the edges.

- To get a smooth texture, you can use an electric hand mixer instead of a manual masher.
