This carrot recipe is made without flour and eggs, so it is a wheat free eggless carrot cake with super delicious cream cheese frosting on top, let’s get started.
Ingredients:
- Milk Mixture:
- 1 cup milk
- 2 teaspoons vinegar
- Wet Ingredients:
- 1 cup white sugar
- 1 cup brown sugar
- 4 tablespoons sunflower oil
- 1 teaspoon vanilla extract
- Dry Ingredients:
- 2 cups wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon powder
- Add-ins:
- Grated peel of 1 orange
- 3 cups grated carrots
- 1 cup ground walnuts
- For Topping (Optional):
- Cream cheese frosting
- Crushed walnuts
- Chopped cranberries
Prepare the Milk Mixture
To make this recipe, take 1 cup of milk in a bowl and add 2 teaspoons of vinegar to it. Mix it well and let it rest on the counter for about 5 minutes.
Mix the Wet Ingredients
Meanwhile, in a separate bowl, add 1 cup white sugar, 1 cup brown sugar and 4 tablespoons sunflower oil. Additionally, add 1 teaspoon vanilla extract and mix it well.
Combine Milk Mixture with Wet Ingredients
After mixing it well now add the milk and vinegar mixture which you had prepared earlier and mix it as well.
Sift and Add Dry Ingredients
Now it’s time to sift the dry ingredients, so add 2 cups of wheat flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of cinnamon powder to the mixture. Then use a spatula to gently incorporate the dry ingredients.
Add Flavor and Texture
Now add orange peel, 3 cups grated carrots and 1 cup ground walnuts and mix well.
Prepare the Cake Pan
When the batter is ready, pour it into a pan greased with oil and cover it with parchment paper.
Bake the Cake
Now the batter is ready for the oven. Bake it in a preheated oven at 180 degrees Celsius for about 50 to 55 minutes or until a skewer inserted in the center comes out clean.
