5 Simple Steps to Create the Most Luxurious Rice Pudding Ever

Rice Pudding is one of the most popular and most loved dish in the world, it is served with different names and different cooking methods across the world but the taste is similar.

Rice pudding is known by different names across the world including Kheer (India), Arroz con Leche (Spain, Mexico), Riso al Latte (Italy), Rose Bel Laban (Middle East) and Milchress (Germany). But this recipe is Indian style rice pudding. I hope you like it.

Rice Pudding

Rice Pudding known as kheer is very famous dersert in indian homes it’s main ingredient are rice, milk and sugar further flavored with different nuts and dry fruits. it’s quick and easy dessert . you can enjoy at any time so let’s go through the ingredient to start making it.

Ingredient

  • 1/4 cup basmati rice (or any white rice)
  • 6 cups full cream milk
  • 1/4 cup sugar
  • 1/4 cup condensed milk (optional, for richness)
  • 1/4 cup khoya (optional, for richness)
  • 1/4 teaspoon cardamom powder
  • 2 teaspoons raisins
  • 8-10 almonds (chopped)
  • 8-10 pistachios (chopped)
  • Saffron strands (optional, for garnish)

Prepare rice

To make this recipe, first take 1/4 cup of basmati rice, it is types of rice, but you can use any white rice. so first wash rice thoroughly 2-3 times till water runs clear.

Now soak them for at least 30 minutes. This will help them cook faster. After 30 minutes, drain all the water. Now mash them with your hand so that Rice breaks little bit which will help them to cook batter and also gives nice texture and consistency to Pudding.

Prepare the milk

Let’s go to the next step. i here i used full cream milk but if you are using a skim milk , You can add 1/4 cup of condensed milk or 1/4 cup of khoya to give rich taste and texture to Pudding.

Step 1

Now take a heavy bottom pan or a walk. now add six cups of milk and switch on the heat .Now let’s it get a boil on high heat. keep stirring in between. To make sure milk doesn’t stick to the bottom.

Step 2

When milk gets a boil put heat to low and add washed and drain Rice. Now stir them well, put heat to low medium and let rice cook till they become soft and milk gets the right thicknes. just make sure to keep stirring in between to avoid making any lums and it will also avoid milk rice sticking to the bottom of pan.

Step 3

After about 25 to 30 minutes, the pudding will thicken and its texture will also look good. So add 1/4 teaspoon cardamom powder, 2 teaspoon raisins, 8-10 chopped almonds, 8-10 pistachios and 1/4 cup sugar to it.

These nuts add extra puch to the Pudding taste. now mix them well and cook on low heat for another 8 to 10 minutes so that all nuts and sugar get mixed well in pudding.

Adjust the Consistency

Depending on your rice quality and variety pudding consistency can be too thick or too thin. if it’s too thick just add half cup more milk and give it on boil and if it’s too thin then cook it for another few minutes till it get the right thickness.

Serve

Now our Pudding/kheer is ready so take it out in a bowl and serve it hot. but if you like it chilled then cover it and keep in refrigerator for 2-3 hours and then serve it cold. you can also garnish it with chopped pachos, almonds and some saffron. it’s tasting so rich and creamy with perfect combination of nutty flavours, so try this easy Desert recipe at any occasion and celebrate happiness.
