Butter Sugar Cookies Ingredient
- Unsalted Butter – 170 g (at room temperature)
- Icing Sugar/Powdered Sugar – 160 g
- Oil – 1.5 tbsp
- Water – 1.5 tbsp
- Baking Powder – 1 ⅛ tsp
- All-Purpose Flour – 320 g
- Cornstarch – 1 tbsp
- Cocoa Powder – 2 tbsp
- Vanilla Extract – 1 tsp
- Coffee Essence (or Coffee Powder, optional)
Prepare the Butter and Sugar Base
To make this recipe, take 170 gram unsalted butter on room temperature . then add 160 g icing sugar/ powdered sugar. Now there is no need to beat the butter and sugar in this recipe, just use a spatula, start slowly and gradually mix it together to get a smooth consistency
Make egg replacement
Next take 1.5 tbsp of oil in a Bowl, to which add 1.5 tbsp of water and 1 ⅛ tsp of baking powder. what we’re doing is creating an egg replacement for our cookies. whisk it well and add it to the suagar and butter mixture.
I find this substitute to be better than the actual egg, reason being a it gives a extra crisp texture to the cookies and B it increases the shelf life which can be stored in an airtight container over the counter for a month.
Incorporate the Dry Ingredients
Now go head and add the dry ingredient which is the allpurpose flour(320 g) . do this by adding it in batches to help incorporate all the dry completely into the wet ingredient.
Remember baking is all about balance too much mixing can make the cookies stuff so you are being gentle here giving us that perfect soft texture when baked.
Form the Dough
When the dry ingredients are well combined, knead it gently with your hands to make a smooth dough.
Now keeping this bowl aside and taking another clean bowl. then you take 1/3 of a portion of the dough. Now add a tablespoon of corn starch into the large portion, and 2 tbsp of coco powder into the other. mix it well. Now at this point you add 1tsp of vanilla extract on large portion and mix it enough to combine it . In the other bowl you add the coffee essence you can add coffee powder if you like and mix it well too. make sure to knead the dough enough to get uniform color of chocolate.
Shape the Dough into Logs
Now take the vanilla dough and form it into a log. It doesn’t have to be perfect, but it should be enough to divide it into equal parts. Now use a knife to divide it into equal parts.
Now take one portion and roll it into a thin log and then repeat the same for the rest.
Now take chocolate dough and repeat the same for this as well, except divide it into fewer parts than the white dough . So if the white is eight then keep chocolate to be seven portions.
Layer for a Unique Pattern
Now take the white log and alternating with the chocolate, and layer it one over the other. gently pressing it down to hold it together as shown in picture.
Notice that the goal here isn’t to make the length or width exactly the same. the idea is to get a pettern that makes each cookies look different from others.
Finally once you have got them all layered up press it down gently to form it into one big rectangular log.
Refrigerate and Slice for Precision
Now take it into the clean warp and place it into the refrigerator for about 15 minutes. this is to allow the dough to rest before you slice into peices. Once it is solid enough bring it to the workstation and unwrap it and cut it into pieces. You can always put the wrapped part in the freezer and use it another day.
Now cut it and you will see a wonderful pattern which is quite breathtaking and satisfying too.
Bake to Perfection
Now place the cookies on a baking tray lined with parchment paper and take them in two pieces. Then bake them in a preheated oven at 170 degrees for about 14 to 16 minutes. They will be fully baked after 14 to 16 minutes. When they turn light golden on the edges, this will ensure perfectly crispy cookies.
