Make Perfect Layered Soan Papdi at Home in Minutes – Easy Recipe

Soan papdi is made in two ways, one is made from wet gram flour and one which is dry. So today I am going to share with you Soan papdi made of dry gram flour, which will have a lot of Flakes, will be very layers, and will be very tasty. So let’s start this recipie without any delay.

Soan Papdi Recipe Ingredients

  • Gram Flour (Besan) – 1/4 cup
  • All-Purpose Flour (Maida) – 1 cup
  • Ghee (Clarified Butter) – 2 tablespoons (for roasting) + extra for greasing
  • Cardamom Powder – 1/2 teaspoon
  • Sugar – 1.4 cups
  • Water – 1 cup
  • Lemon Juice – 1 teaspoon
  • Chopped Dry Fruits – (optional, for garnish)

Roast the gram and flour:

To making the Soan papdi first of all, roast the gram and flour well. For which, add 1 cup of flour and 1/4 cup of gram in a pan. First of all you will bake both of them well. And then add 2 tbsp ghee. Now mix it well. Now keep stirring them continuously and roast them well on medium flame. After that add 1/2 tsp cardamom powder. You will rost both these mixtures till their colour changes. After roasting it for at least 15 minutes, turn off the gas.

Keep in mind: So even after turning off the gas, keep stirring it for 2 minutes. Because The pan is very hot if you leave the pan like this, then flour gets burn from below.

After the flour cool down, You must sieve it so that all the coarse grains get separated from it.

Prepare the sugar syrup:

After the mixer is ready, you will prepare the sugar syrup. For this, take a pan and add 1.4 cups of sugar, 1 cup of water and 1 teaspoon of lemon juice and mix it well. Now keep stirring it continuously and cook it on medium flame. When the color of the syrup turns golden brown then your syrup will be ready.

Once your syrup is ready, after garnishing it with ghee in a plate, add all the syrup to the plate. You will let it cool for 5 minutes. So that it gets set a little. After cooling down, You will collect the syrup with the help of spoon. First, make layers by stirring it with a spoon and then apply some ghee on the hands and then make this layer like a roll with your hands. And now stretching it and expand it like cord.

When it becomes long like a cord, join its two ends together. Now take a preapred flour and gram mixture and coat the sugar’s cord. Coat the syrup and turn it again and again in the mixture what will happen is that it will start forming layres. And repeat this proccess only 5-10 minutes. After that your Soan papdi will be almost ready.

When your Soan papdi will be ready then give it shape. Take a small cup and put some chopped dry fruits at the bottom then put some sonpapadi in it and press it a little, It will be set in the automatics.

Tips:

  • Roast the gram and flour until they turn brown.
  • You will have to cook the syrup till it becomes round after going into the water.
  • After making the syrup, first make a layer in it with the help of a spoon, then stretch it with your hands and make it bigger.
  • You will need to coat your syrup cord with the mixture and continue pulling it along so that multiple layers are formed.
  • Lastly, you can use it even without giving it any shape.
