Today i am making cheesy and delicious quesadillia using vegetables. That is very easy to make at home. Quesadilla is a mexican dish Which is filled with cheese and vegetables. Till now you must have eaten it only in hotels and restaurants. But today we will make it easily at home with homemade ingredients. This is a recipe that children will like very much. Because it looks and tastes like pizza.So let’s start without any delay.

For the Dough |
1 cup all-purpose flour (maida) Salt to taste 1/2 cup water (gradually added) Oil (for kneading and cooking) |
For the Veggie Stuffing |
2 tbsp oil (for sautéing veggies) 1 tsp chopped or sliced garlic 1 medium-sized onion (sliced) 1/2 cup tomato (sliced) 1/4 cup capsicum (sliced) 1/4 cup sweet corn Salt to taste 1/2 tbsp red chili powder 1/4 tbsp mixed Italian herbs/oregano (or any Indian masala like garam masala) |
For the Quesadilla |
1/2 cup mozzarella cheese (shredded) 1 cheese slice or processed cheese (optional) Mixed herbs or tangy masala (optional) Chilli flakes (optional) Oil or butter (for cooking) |
Prepares the Dough:
In a bowl take 1 cup all purpose flour and add salt as per taste and mix well.Now add 1/2 cup water gradually and knead soft dough. Knead it for 2-3 minutes and then apply some oil. After making a dough cover it and let rest for at least 5-10 minutes.
Prepare the veggies:
While your dough is resting, you can prepare the vegetables. so for that heat a pan and add 2 tbsp oil and add 1 teaspoon chopped or sliced garlic, 1 medium sized slices onion and mix well. After that, just saute for a few second.
Now add 1/2 cup sliced tomato, 1/4 cup slices capsicum and 1/4 cup sweet corn. And stire it for a few second. There is no need to overcook the vegetables. Just make them slightly soft. With this you add a little salt as per taste, 1/2 tbsp red chilli powder, 1/4 tbsp mixed italian herbs/oregano or anything you have. If you do not have these herbs you can add any indian masala like garam masala or chicken masala any masala of your choice.
Divide the dough in portion:
When the vegetables are cooked well, make balls from the dough, for this
you need to again knead dough for 15-20 seconds. After kneading the dough, divide the entire dough into at least three equal parts.
Roll the dough’s ball and cook:
Now take a one portion of dough’s and sprinkle flour powder on your countertop or your chakla. Now, Roll it out very thinly like a roti. Roll it as thin as you can. Along with this, you should also heat the pan.Now you need to cook this roti on both side.
You should cook it only till it turns from white to translucent. Because you are going to cook it with stuffing too. So do not cook it copletely .Similarly cook the other balls.
Prepare the Quesadilla:
After cooking the roti you can prepare the quesadilla. So take one sheet or roti and sprinkle 1/2 mozzarella cheese then place the prepared stuffing again sprinkle some cheese and place the 1 cheese slice or you can add some processed cheese from the cheese cubes. After that in the last mixed some herbs or you can also add any tangy masala, sprinkle some chilli flakes.
Now fold the sheet or roti and press it with spatula. The cheese which you added at the bottom and te top would help keep the sides of quesadilla together.
Cook the Quesadilla:
After preparing the quesadilla, you can cook it.For this, First heat the pan and put some oil. If you want you can also use butter. And now you need to cook the quesadilla on both sides till the cheese melts and quesadilla gets nice light brown spots on both the sides. You need to repeat the same steps for the next quesadilla.
Serve it:
Now your cheesy mexican Quesadilla will be ready. You can cut it into small pieces and serve it. Children are going to like this delicious dish very much. You can make it for children’s lunch box or even for breakfast.

Tips:
- You can also use corn flour in the dough.
- You should cook the roti till it becomes slightly translucent because you are going to cook it with stuffing also.
- You can add any vegetable as per your choice.
- You can also use leftover roti from the evening for this dish.
- While stuffing, you must add cheese in the beginning and at the end so that it holds the roti together from both the sides
- After stuffing, cook it well on both sides until the cheese melts.
