Christmas season is here and it’s incomplete without baking these delicious cakes at home . today i am going to share a lovely Christmas plum cake recipe with you all. this is eggless and non-alcoholic, making it perfect for everyone to enjoy.

I have made this cake at home for a while now and i wanted to share this recipe with all of you so let’s get started and check it out.

Ingredients for Plum Cake

Dry Fruits Soaking

  • Cherries – 100 g (chopped)
  • Tutti Frutti – 100 g
  • Cranberries – 60 g (or substitute with other dry fruits)
  • Golden Raisins – 60 g
  • Black Raisins – 60 g
  • Apricots – 60 g (chopped)
  • Dates – 60 g (chopped)
  • Brown Sugar – ¼ cup (or substitute with white sugar)
  • Cinnamon Powder – ½ tsp
  • Nutmeg Powder – ½ tsp
  • Clove Powder – ½ tsp
  • Orange Rind – Grated (a little)
  • Orange Juice – 1 ¼ cup

Caramel Syrup

  • White Granulated Sugar – 1 cup
  • Hot Water – 1 cup

Wet Ingredients

  • Unsalted Butter – 200 g (melted)
  • Vanilla Essence – 1 tsp

Dry Ingredients

  • All-Purpose Flour – 300 g
  • Salt – ½ tsp
  • Baking Soda – ½ tsp
  • Baking Powder – 1 ½ tsp

Nuts

  • Cashews – 100 g (chopped)

Step-by-Step guide

Soak the Dry Fruits

To the Bowl add about 100 grams of chopped up cherries, 100 grams of tutti frutti, next add about 60 grams of cranberries if you don’t have cranberries then you can use the other dry fruits instead.

Next add 60 grams golden raisin, 60 grams of black raisins, 60 grams of chopped apricots, 60 grams of chopped dates and next add about quarter cup of brown sugar . if you don’t have brown sugar , you can just use the regular granulated white sugar ..

Now next add about 1/2 teaspoon of cinnamon powder, 1/2 teaspoon of nutmeg powder,1/2 teaspoon clove powder and 1/2 teaspoon of carbon powder.

After this, grate some orange peel in a bowl and after that add about 1 1/4 cup of orange juice in the bowl. Now mix everything and let the dry fruits soak in orange juice for about 30 minutes.

Prepare the Caramel Syrup

Now caramelize some sugar in a saucepan, for this add about 1 cup of white granulated sugar and then mix it gently. Once the sugar dissolves completely and caramelizes, you will see that it has a very nice rich caramel color, a nice dark brown color.

At this point turn off the stove and gradually pour one cup of hot water, just be a little careful while doing this because it tend to bubble up a lot . so once you’ve added all the hot water turn on the stove back and just mix it , so the sugar is completely dissolved .

Combine Wet Ingredients

Turn off the stove at this point and pour the caramelized sugar syrup into the bowl .

Next add 200 grams of melted unsalted butter, 1 teaspoon of vanilla essence and mix everything nicely .

Prepare Dry Ingredients

The wet ingredients are ready. Now for the dry ingredients, sieve 300 grams of all-purpose flour into a bowl, then add 1/2 teaspoon salt, 1/2 teaspoon baking soda and 1 1/2 teaspoon baking powder and sieve all of these ingredients into a bowl as well.

Now add the dry ingredients to the wet ingredients, do this in batches, first add a portion of the flour and mix it in. Now add the remaining flour and mix until everything is well combined.

After this, add 100 grams of chopped cashews to it. You can use any dry fruits of your choice like almonds or walnuts then mix it together.

Bake the Cake

Now put parchment paper on the bottom and sides of the cake tin. Now pour the cake batter slowly into the cake tin.

Once you’ve poured the cake batter gently, tap the cake till meanwhile preheat the oven to about 160 degrees fahrenheit . bake it for about 160 degrees for about 1 hours and 45 minutes.

So after 1 hour and 45 minutes you will see that the cake is cooked beautifully.

Tips

Be carefull after pouring hot water because it bubble up a lot.

If you don’t have brown sugar then use normal suagar instead.
