Amla Rice: We all know that amala that is gooseberries is extremely good for our health, it has a lot of health benefit it is rich source of vitamin c and consuming gooseberries regularly can improve our immunity. Normally we tend to consume it in the form of juice or in the form of pickle because of its sour taste.
Today i am going to share of a wonderful rice reciope that you can make for your lunch boxes as well so let’s get started and checked out this delicious and simple gooseberry rice .

You can make a lot more recipes using amla but this one is very simple and quick to make . this simple recipe which can be prepared in just about 15 minute.
Ingredient
- Amla (Gooseberries) – 4 large
- Raw Rice – 1 cup (cooked)
- Oil – 1 tsp
- Chana Dal (Split Bengal Gram) – 1 tbsp
- Urad Dal (Split Black Gram) – 1½ tbsp
- Mustard Seeds – 1 tbsp
- Cumin Seeds – 1 tbsp
- Red Chilies (dried) – 2, cut into half
- Roasted Peanuts – as needed
- Cashew Nuts (optional) – as desired
- Asafoetida (Hing) Powder – 1/4 tsp
- Green Chilies – 2, finely chopped
- Ginger – 1 small piece, finely chopped
- Turmeric Powder – 1/2 tsp
- Salt – 1 tbsp (adjust as needed)
- Fresh Curry Leaves – a handful
Prepare the amla and rice
For this recipe, first take 4 big amla that is gooseberries and greate the amlas in a grater. it will be around 1/2 cup. beside this cook the raw rice and keep it aside . let’s temper and prepare the amla rice now.
Spice Tempering
Now add 1 tsp of oil to a pan. Once the oil is hot, add 1 tbsp of chana dal (Split Bengal Gram), 1½ tbsp of urad dal (Split Black Gram), 1 tbsp of mustard seeds, 1 tbsp of cumin seeds, and 2 red chilies (dried red chilies) cut into half, then roast them.
Flavorful Peanut Tempering
Once mustard seed starts splattering, add some roasted peanuts. adding peanuts will bring a nice crunchiness to the rice . you can also add cash nuts if you want. now add 1/4 tbps of of asafoetida(hing) powder, 2 finely chopped green chillies , 1 piece of ginger finely chopped and saute it . this time keep the flame on low and roast everything nicely.
When everything is well roast then add 1/2 tbps of turmeric powder and 1 tbps of salt and mix everything well.
Add amla
Now add the grated amla. you can adjust the quantity of the amala according to the quantity of rice . saute the grated amla for about 2 to 3 minute then add the fresh curry leaves to it and mix.
Add rice
After 3 minute you can add the rice. use fresh rice but if you have any leftover rice at home , you can use that as well. mix the cooked rice and the amla together.
Now this stage you can check for seasoing and add a litttle bit of salt if required.
Now your really simple and tasty amla rice is ready to be served . You can serve this with some nice potato fry . it’s a perfect healthy luchbox.

Tips
- Amla should be fresh.
- You can use freshly cooked rice or leftover rice.
- While roasting the spices and amla, keep the flame low so that they do not burn and the flavours blend well.
- Taste the rice before serving and adjust the salt or seasoning as needed for the perfect balance of flavors.
