Vegetable Soup : Hello friends welcome back to my new recipe. Today I am going to share with you veg soup for the soul. Means a tasty, creamy and simple vegetable soup which will be amazing. In this veg soup you can add vegetables of your choice. And you can keep it a veg clear soup or you can puree it and can make a smoothe creamy style vegetarina soup. So let’s make veg soup without any delay.

Ingredient-
For the Base
- 2 tablespoons oil or butter
- 2 teaspoons chopped garlic
- 2 teaspoons chopped ginger
- Green chilies, to taste
- 3 tablespoons chopped spring onion
For the Vegetables
- 1 tablespoon flour (for thickening)
- 1/2 cup chopped cabbage
- 1/2 cup chopped carrots
- 1/2 cup boiled corn kernels
- 1/2 cup chopped capsicum
- 1/2 cup chopped beans
- 1/2 cup green peas
- 1/2 cup diced raw potato (for extra creaminess)
For the Spices
- Fresh basil leaves, a handful (or to taste)
- 1 teaspoon oregano
- 1 teaspoon chili flakes
- 1 teaspoon thyme
- Salt, to taste
For the Soup Stock
- 1 liter water or vegetable stock
Prepare the base:
For makin a veg soup take a pan and heat it. And add 2 tbsp oil or butter. After melting the butter or heating the oil, into it will add 2tsp chopped garlic and ginger. And mix it well with butter. Now add green chillies according to the taste and 3tbsp chopped spring onion. Give it nice stire, don’t make it brown, just a lil stir.
Add vegetables:
After roasting ginger, garlic and onion add 1tbsp flour for thickening. Now into it will add vegetables like 1/2 cup chopped cabbage, 1/2cup chopped carrots, 1/2 cup boiled corn kernels, 1/2cup chopped capsicum, 1/2 cup chopped beans and 1/2 cup green peas. Now will roast them for around 5 mins. For making the soup a little thick and creamy you can add raw 1/2 cup diced potato.
Add spices:
After roasting the vegetables, You can add the spices. Add some basil leaves, 1tsp oregano, 1tsp chilli flakes, 1tsp thyme and salt to taste. Now mix these spices well with the vegetables and cook them. The roasting is very important, don’t be in a hurry to add water. Because on roasting the rawness of vegetables will be removed, and the soup will get a well rounded flavour.
Add water:
When your vegetables are cooked well then you can add 1 liter water/veg stock. Now let it boil. When the soup comes to a good boil then turn off the gas. If you want you can serve as is, or make it creamy.
Grind the vegatables:
To make nice creamy soup, you will strain it out. Let the vegetables cool down. When the vegetables cool down completely, then grind them in a mixer with veg soup.
Boil the puree:
The vegetables will change into a beautiful puree after grinding. Now add it puree in a pan and give it a quick boil. Remember don’t cook it more, because it’s color will itself become dark. That’s why one quick boil and that’s it.
Serve it:
After quick boilig the puree your creamy and tasty veg soup will be ready to serve. Now you can make this veg soup with seasonal vegetables anytime during winters and boost the immunity power of yourself and your family members.
Tips:
- If you needs a soup for weight loss, then can use olive oil instead of butter.
- If you don’t have spring onion you can use regular chopped onions in the same quantity.
- If you want a clear soup then you can avoid the use of flour.
- If the puree is too thick then you can add water to it.
- You can give it an Indianm Italian, and Asian flavour, it’s all upto you.
- Remember don’t over cook nd over boil the vegetables.
