Indian style Bruschetta
Bruschetta is a classic Italian recipe, famous all over the world for its simplicity and taste. But today we are going to add an Indian twist to this classic recipe.
Ingredient
- 2 medium-sized tomatoes
- 2 tbsp fresh coriander
- 1/2 tsp chili flakes
- 4-5 cloves garlic
- A few drops of lemon juice
- 1 tbsp extra virgin olive oil
- 1 loaf of French bread
- 3 tbsp extra virgin olive oil
- Salt (to taste)
- Processed cheese
Prepare the Tomato Mixture
For this recipe you need 2 medium sized finely chopped tomatoes, so make sure you use nice red ripe tomatoes in this recipe but not very sour tomatoes.
Add the chopped tomatoes to a bowl, next add 2 tbsp fresh chopped coriander . In the tradiational recipe basil leaves are used but basil is not easily available to all of us so that you can use coriander, it goes really well in this recipe.
Next add half teaspoon chilli flakes. if you do not add chilli flakes the bruschetta might become bland for your desi palette. you can purchase the chili flakes or can easily make it home.
Next take 4-5 cloves of garlic and chop it finely using your knife or you can crush it using you regular mortar and pestle and then add to the mix.
Next add a few drop of lemon juice. do not skip it, this is also one of the Indian desi touches in the recipe.
Next add one tbsp extra virgin olive oil. extra vigin olive oil goes very well with this recipe. if you use your regular oil, bruschetta might not be that tasty which it would be with extra virgin olive oil .
Now mix well and now your tomato mixture is ready.
Ready bread slices
Now take a loaf of French bread. If you don’t have French bread you can use regular bread slices. If you are using a loaf of French bread then slice it. if you use regular bread slices cut them into triangles.
Ready garlic oil
Next in bowl you have take 3 tbsp extra virgin olive oil and add some salt and finely chop 4 cloves the garlic to it . mix well.
Toasting
Now your garlic oil is ready so apply some oil to bread slices on one side. apply a thin coating meanwhile heat your tawa and place the coated side down on the tawa . keep the flame low and toast bread slices.
you can gently press the slices with a spatuala so that there is even cooking or even toasting of the bread slice. after keeping all the slieces apply the garlic oil on top as well.
flip the bread slices the bread slices should be toasted such that they are crispy on the outside but they remain soft inside we don’t want them to be like toast very hard. after flipping place some processed cheese on top . once cheese melts take the bread slices out .

Serve
Now your bread slices are ready, serve them on a plate. Take one slice and place some mixture. you may dirzzle extra virgin olive oil .
So just before serving the bruschetta you can place tomato stuffing on top, if you do this then the bread slices might become soggy.
This is a very easy recipe and it tastes fantastic, make sure you use red ripe tomatoes and extra virgin olive oil.
