Instant Ragi Dosa: Make Crisp, Market-Style Dosas at Home with a Tangy Ginger Chutney

Instant Ragi Dosa: Hello friends, welcome to my new recipe. Do you want to make a quick breakfast? Do you also want to make healthy dosa at home like the dosa available in the market? Then today’s recipe is for you.

Everyone loves to eat Dosa and it takes a lot of effort and time to make Dosa. But nowadays everything is made instantly so today I will make Instant Dosa in which I will use Ragi flour. Ragi Dosa is very easy to make and it does not require yeast and is made instantly. So let’s make Dosa without any delay. Today I will also share the recipe of Alam Pachadi or Ginger Chutney to serve with Ragi Dosa. South Indian style Ginger Chutney which is a little spicy and tangy as it has a good amount of ginger in it.

Ingridient

For Ragi Dosa Batter:

  • Ragi flour – 1 cup
  • Rice flour – 1/4 cup
  • Semolina (Suji) – 1/2 cup
  • Curd – 1/4 cup
  • Finely chopped ginger – 2 tsp
  • Chopped green chilli – 2 tsp
  • Cumin – 1 tsp
  • Salt – 1/4 tsp
  • Water – 1/4 cup (additional water as needed for batter consistency)
  • Oil (for cooking dosa)

For Ginger Chutney

  • Oil – 2 tsp
  • Urad dal – 1 tsp
  • Chana dal – 1 tsp
  • Dry red chilli – 3-4
  • Ginger slices – 1 cup
  • Jaggery – 1 tsp
  • Tamarind – small piece
  • Salt to taste
  • Water – 1/4 cup (for grinding chutney)
  • Curry leaves (for tempering)
  • Black mustard seeds (for tempering)

Prepare the batter:

For making Ragi Dosa, first prepare its batter. For which,

First take 1 cup ragi flour and also add 1/4 cup rice flour, 1/2 cup semolina. Because Ragi is soft and semolina helps to give it a crispiness to the dosa. And add 1/4 cup curd, 2 tsp of finely chopped ginger, 2 tsp of chopped green chilli, 1 tsp of cumin, 1/4 tsp of salt and 1.4 cup water. Now mix it well. After mixing your batter will be ready and will give 10-15 minute rest.

Prepare the ginger chutney:

Roast the lentils and chillies:

Now till the batter is resting, will make ginger chutney. For ginger chutney take a pan and add 2 tsp oil, and add 1 tsp of urad dal, 1 tsp chana dal, 3-4 dry red chilli. Now you will roast it and let the lentils turn light brown and spread it out.

Cook the ginger:

Now take a same pan and add 2 tsp oil and add 1 cup ginger slice. Now you will cook it 2-3minutes on medium flames. And turn off tha flame and mix it with other mixture.

Grind the mixture:

Now let it cool down a bit. And add it in the grinder also add 1 tsp of jaggery, small piece of tamarind, salt to taste and 1/4 cup water. And now grind it. After grinding your ginger chutney will be ready.

Now there are two ways you can tempre it with curry leaves and black mustard or serve as it is its upto you.

Making the dosa with batter:

After letting the batter rest properly, you can prepare the dosa. For which,

First heat up the dosa pan. Now add some water to the batter. This will give you a running batter. Now lets make the dosa. Pour the batter into the center of pan and immediately spread it. Spread some oil on it and cook it slowly to get a nice color on the outside with a crisp. And flip this Now fold this dosa will ready and make more like this.

Serve it:

Now you can enjoy this ragi dosa by serving it with ginger chutney. You can make it very easily and quickly at home. You can also make it and serve it to children for breakfast because both this dosa and chutney are healthy.

Tips:

  • After mixing semolina in the ragi batter, let it rest so that the semolina gets properly set with the batter.
  • Make sure to mix semolina with ragi Because Ragi is soft and semolina helps to give it a crispiness to the dosa.
  • Roast the pulses in the chutney till they become turn light brown.
  • After heating the dosa pan, sprinkle some water on it and wipe it with a tissue paper so that the dosa does not stick.
  • While cooking dosa, cook it on medium flame only.
