Grilled Chicken Salad recipe
If you are looking for a protein-rich salad, then chicken salad with tahini sauce is a great option. So today your wait is over because today I am going to share the recipe of chicken salad with you all. It is a very easy recipe, you can make it at home very easily.As you know Chicken is a quality protien and sesame seeds contain anti-inflammatory properties and are a great source of healthy fats. So for all vegetarians, you can replace the chicken with tofu or paneer. So let’s start it without any delay.
Ingredient
For Marinating the Chicken:
- 2 chicken breasts
- 1 tbsp ginger & garlic paste
- 1-1.5 tbsp lemon juice
- 1 tbsp olive oil
- Salt (to taste)
- 1/2 tbsp paprika
- 1 tbsp honey
For the Vegetables:
- 1 tbsp olive oil
- 1 tbsp chopped garlic
- 2 medium onions (cut into quarters)
- 1/2 small green zucchini
- 1/2 small yellow zucchini
- 5 button mushrooms (chopped)
- 1/2 cup chopped bell peppers
- 1/2 cup sweet corn
- 1 cup chopped broccoli
- 1 tbsp cumin powder
- 1 tbsp Italian herbs
- 1 tbsp black pepper
For the Tahini Dressing:
- 5 tbsp tahini
- 1 tbsp hung curd
- Water (for consistency)
- 1 tbsp chopped coriander leaves
For Garnishing:
- Green vegetables (for garnish)
- Seeds (for garnish)
Marinate the chicken:
For this recipe, it is very important to marinate the chicken first.
For this, first take a big bowl and add 2 pieces of chicken breast in it and then add 1 tbsp of ginger & garlic paste, 1-1.5 tbsp of lemon juice, 1 tbsp of olive oil, salt as per taste, 1/2 tbsp of paprika and 1 tbsp of honey. Now mix it well so that your chicken gets marinated. And after marinated keep that aside for like 15 to 20 minutes.
Prepared the veggies:
While your marinated chicken is resting, get all your vegetables ready. For this,
Take a pan and add 1 tbsp of olive oil, 1 tbsp of chopped garlic, 2 medium onions (cut in quarters), and 1/2 small green and yellow zucchini. Now stire and cook it. And after 1-2 minutes add 5 chopped button mushrooms.
Again after 1-2 minutes you’ll add 1/2 cup of chopped bell peppers, 1/2 cup of sweat corn. Now stir it for some time and make it soft. When your mushrooms and corn become soft then you can add 1 cup of chopped broccoli and 1 tbsp of cumin powder, 1 tbsp of italians herbs and 1 tbsp of black peppers . It will take the longest time to cook. So you should cook it on low flame till all the vegetables become soft.
Cook the chicken:
While your veggies are cooking then then you cook the chicken. For this,
Take a pan and add 1 tbsp of olive oil.Now let it heat up. When the oil is hot, add the marinated chicken to it comfortably.Now, You should cook the chicken on the both side for at least 4-5 minutes.
Dress the tahini:
When your chicken and vegetables are ready then prepare the tahini dressing for the salad. Now for your tahini salad Take a bowl and add 5 tbsp of tahini salad dresing, 1 tbsp of hung curd and add some water for consistency. Now mix it well.
After mixing them, you just add 1 tbsp of chopped coriander leaves. Now you mix it together nicely again.
Serve:
Now when everything is ready, you can put the vegetables and chicken in a plate and add the dressed tahini on top. Also, garnish it with different green vegetables and seeds. You can make and enjoy it anytime, which is very healthy.
