Chicken Dum Biryani
Friends, everyone can cook chicken Biryani but very few people can cook chicken biryani in the right way. Which is a trick in itself. Every different chicken biryani recipe has been given different names. Today I have brought one such recipe which is called Chicken Dum Biryani. Which you can easily cook at home with household ingredients. So let’s cook this dish without any delay.
Chicken biryani recipe ingredients
For Marinating the Chicken:
- Chicken (cut into small pieces)
- Salt (to taste)
- 2 tbsp caraway seeds
- 4-5 cardamom pods
- 1 small piece of cinnamon
- 1.5 tbsp turmeric powder
- 1 tbsp chili powder
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 2 green chilies (broken)
- 3/4 cup brown onion
- 1 cup mint leaves
- 1.5 cups curd
- 1/4 cup oil
For Cooking the Rice:
- Water (for boiling)
- Salt (a generous amount)
- 3-4 cardamom pods
- 1 green chili
- 2 cups basmati rice (soaked for half an hour)
For Assembling and Cooking the Biryani:
- 1 cup rice water (reserved from boiling rice)
- Dough (for sealing the pot)
- Additional brown onions (for topping)
- Additional mint leaves (for topping)
- A pinch of saffron (for topping)
Marinate the chicken:
If you want to make the tasty Chicken Biryani, then first you need to marinate the chicken.
For which you first take the chicken, You have cut this in small pieces so that is easy to cook. If you have can also use a whole chicken.To marinate, First will add salt to taste in it, add 2 tbsp of caraway seeds, add 4-5 cardamom, 1 small piece cinnemon, 1.5 tbsp of turmeric powder, 1 tbsp of chilli powder, add 1 tbsp of garlic paste and 1 tbsp of ginger paste, add couple of green chillies just break them and add them.
Now you will add 3/4 cup of brown onion, add 1 cup of mint leave, add 1.5 cup of curd and mix it well. Now you will add 1/4 cup of oil, nicely mix it again after adding the oil.
Keep in mind: This is marination is not kept for a day or overnight or even for hours.Just marinate it and use it.
Cook the rice:
While you marinate the chicken, cook the rice for a little while. For which
You first boil the water. When your water start to boil then add salt in it, and not just a little or enough but add too much salt And add 3-4 cardamon, add 1 green chilli.
Just think, Why have you added so much salt to the water because when you blanch the rice in it and throw the water maximum salt is thrown out, The rice soaks up very little salt,That’s why.
Take 2 cups of basmati rice, Which you soaked in the water for half an hour.You will, Now put the rice in the boiling water. One light stire Count till 20. Literally 20-25 seconds and first layer that goes at the bottom of the vessel you take that out. Here you can use a filter as it is easier to use.
Keep in mind: You need to cook the rice for a very less time. You can just put the rice in the boiling water count till 20 and take it out.
Mix the rice and chicken:
While you cook the rice, then Mix the rice and the chicken. For which
You first take a deep vessel and first put some rice in it and then add all the marinate chicken. Layer it over the rice. Now, turn off the gas here and you will strain the rice, Rice is still very raw. Now, this rice will go on top of the chicken layer. Now, you will spread the 1 cup of rice water over the vessel.
Cover the vessel and cook:
While you add all rice and chiken then you will cover the vessel and cook with a smaal tips. For which,
Take some dough and roll it out nicely. And apply this dough on the sides of the pot. And add some brown onion, some mint leaves, add a pinch of saffron on top. Now apply water on this dough with wet hands. So that the lid sticks easily. Now press the dough so that it gets sealed.
For now, It will at least take 10-12 minutes. The first 2 minutes on high flame and then on a slow flame cook for 10-12 minutes. And this biryani will be ready.
Serve it:
Once the biryani is ready, then give the rest it for 7 minutes befor opening. To open it, So you will use knife put it and twist.The fragrance of biryani and as you cooked it in an earthen wear.Now you can serve it and enjoy with family. Which seems very tasty to eat.

Tips:
- After marinating the chicken, use it immediately without any delay.
- You should keep the rice soaked in water beforehand.
- Put the rice in boiled water and cook it only for 20-25 seconds.
- If possible, use only earthen pots to make it.
- You should fry the onions and brown them beforehand.
- To cover the lid, first place dough on the edges of the vessel so that it gets sealed properly.
- After cooking, you must keep it on rest for 6-8 minutes.
