Friends, when we get bored of eating dal with rice every day at home, then we feel like eating something spicy and tangy. For which today I have brought such a recipe for you people. In which you are going to eat normal rice in a different way. And that is veggies in tandoori sauce with spinach rice which you can easily make at home. So let’s make this recipe without delay.
Ingredients for Veggies in Creamy Tandoori Sauce:
For Tossed Veggies:
- 2 tbsp oil
- 1 tbsp ginger & garlic chili paste
- 1/3 cup diced zucchini
- 1/3 cup mushrooms
- 1/3 cup boiled baby corn
- 1/3 cup mixed bell pepper
- 1/3 cup blanched broccoli
- 1 tbsp chili flakes
For Tandoori Sauce:
- 2 tbsp butter
- 2 tbsp refined flour
- 1/3 cup milk (divided into batches)
- 1 tbsp Kashmiri red chili powder
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tbsp dried mango powder
- 1/4 tbsp black salt
- 1/4 tbsp roasted dried fenugreek leaves
- 1/4 tbsp turmeric powder
- 1/2 tbsp garam masala
- Salt to taste
- A pinch of freshly cracked black pepper
- Burning coal
- Ghee
For Garnish:
- Fresh chopped coriander leaves
Veggies in creamy Tandoori souce:
First of all, let’s learn how to make Veggies in creamy Tandoori sauce. For which first you,
To toss the veggies, heat a wok on a high flame nicely.Now add 2 tbsp oil to this, add 1 tbsp of ginger & garlic chilli paste now cook this paste for about half a minute. Now, to this add 1/3rd cup diced zucchini & add 1/3 cup mushroom. Then toss them on high flame for 1 minute.
Now to this add 1/3 cup boiled baby corn,1/3 cup mixed bell pepper, 1/3 cup brached broccoli & add 1 tbsp chilli flakes then again toss on high flame for 1 minute.
Keep in mind: When you tossing the vegetable, then keep in mind not cook the vegetables too much keep the crunch intact.
Make the tandoori sauce:
When your vegetables is ready, then make a smoky tandoori sauce.For which first you,
Take a pan and heat it. When your pan is heat then add 2 tbsp butter to a pan, Once yous butter melts, then add 2 tbsp refined flour to this. Now, stire this continuously & mix it well And cook the refined flour with butter very well untill it’s texture becomes a little sandy.Initally you might think that it looks like a dough, But gradually it will loosen up and give a sandy texture.You will cook it till it gets a sandy texture.
Add milk:
When you will cook the refine flour then you add milk in it and cook it. For which, first you
Using a whisk, add 1/3 cup of milk and stir quickly and vigorously. So that lumps don’t form.As soon ass this is mixed add the second batch & stire it quickly.Once the milk is incorproted, add the last batch of milk & while it cook this mixture.So that your white sauce turns out really creamy & milk smooth.In this way your creamy sauce will be ready.
Add tandoori’s spices:
When your sauce is ready then add some tandoori’s spices to it.For which, first you
Add 1 ybsp kashmmiri red chilli powder, 1 tbsp corainder powder, 1 tbsp cumin powder, 1 tbsp dried mango powder, 1/4th tbsp black salt,1/4 tbsp roasted dried fengugreek leaves, 1/4 tbsp turmeric powder, 1/2 tbsp garam masala, salt to taste and add a pinch of freshly cracked black pepper.Now, stire it nicely & cook it for 2-3 minutes. So that your spices are cooked through & flavours of your spices influse well with your white sauce.
Keep in mind: Your flame should be on a medium
Add burning coal:
When your spices cooked for 2-3 minutes then add burning coal for smoky flavour. For which, first you
Take some burning coal & add ghee on top of it.As soon as you add the ghee, cover it with a lid.After closing the lid, let it be like that for 2-3 minutes, Due to the smoke coming from the coal, your sauce will get that smoky flavour & that perfect tandoori flavour will come as well.
After 2-3 minutes lift the lid and also remove the coal.
Add sautdeed vegetables:
After removing the coal add the sauteed vegetables to this & stire it nicely & even here you have to cook it just for 1-2 minutes.And your vegetables should be crunchy.Taste it after cooking 1-2 minutes and adjust the salt. In the end, add some fresh chooped coriander leaves & Now your veggies in creamy smoky Tandoori sauce are ready.
Spinache rice:
When your vegies in tandoori sauce are ready then next to serve with this, you have to make the vibrant green delicipus spinaches rice. So let’s make the spinache rice.
Blanch spinach:
To make spinach rice, first of all, boil the spinach. To boil the spinach, boil the water nicely.Now to this add 1 bunch cleaned spinach leaves.You have to dip the spinach just for 15-20 seconds.Once the 15-20 second are up, then quickly remove the all spinach & immediately dip it in ice water.
You have to sahock the spinach by lowering the temperature.Doing sso will maintain the vibrancy of the green colour your spinach.
Make a spinach fine paste:
Once you have balanced the spinach then remove it & add it to a mixer-grinder.Along with it add 8-10 leaves of fresh mint, few coriander leaves & add 2 green chillies & prepare a fine paste out of this.
Cook the spinach’s paste:
when your spinach paste is ready then cook it. For which,
First you, Heat a wok nicely.Now add 1 tbsp oil & 1 tbsp butter to it & let it heat up nicely.Now, to this add 1 tbsp chopped garlic,1 tbsp chopped ginger, add 1 medium sized sliced onion. Nicely cook it high on high flame untill your onions are nice & light golden brown in colour.
When your onion are light golden brown in colour. No, to this add the spinach pure that we had made earlier.Along with that salt to taste, a pinch of salt,& add 1 tbsp red chilli flakes & stire well. Now, you have to cook this pure for 3-4 minutes on a medium high flame.
Add rice:
Once you have cooked the spinach well, then you have to add rice to it.
Here you can pre-cooked basmati rice.For which, You have wasshed, soaked & cooked 1.5 cups basmati rice.That will give you about 4.5 cups cooke rice. So, if you are using cooked rice then add 4.5 cups cooked rice, & add to this puree.Now, stire it gently but nicely.You have to cook the rice with spinach puree for just 2-3 minutes.When you observe it that, everything is mixed well and you have cooked rice for 2-3 minutes.Now in the end, add 1 tbsp lemon juice to this & stire it well nicely.Now your spinach rice is ready.
Serve:
Now your spinache rice and veggies in tandoor sauce are ready. Now you can serve both of them together on a plate and garnish them with cheese and chilli flakes.Which children are going to like very much.Which children are going to like very much. You can also give it in the lunch box.
You can actully eat both these recipes as a standalone recipe too.The vegetable in creamy tandoori sauce can be eaten as it is or with pastaa.
